To coordinate and conduct Pre and/or Post-harvest food safety research with an emphasis on elucidating mechanisms associated with pathogens and their relationship to gut health in heavy broilers and laying hens. Areas of focus may include but are not limited to molecular determinants of pathogenesis, impact of strain variations, and tissue tropism of pathogens (Escherichia coli, Clostridum, Salmonella, etc.) that infect broilers and layers; identifying immunological targets that will confer cross-protection to pathogens in poultry; investigating pre- and pro-biotic interventions, both in ovo and post-hatch, and their effect on pathogen colonization and gut health. Environmental factors that are known to impact poultry production (lighting, litter conditions, stocking densities, and nutritional factors such as antibiotic alternatives) may be a focus. A farm to fork approach when it comes to food safety will be assessed throughout the entire production and processing process.
To conduct research in the areas described above that will be published in quality journals. Assist in seeking extramural funding. Support research as described. Interact with staff and students; possibility of some teaching. Contribute to department strategic goals and service efforts
